June 29, 2009

from Veria

Honey is the ideal natural sweetener. Not only does it satisfy even the strongest sweet tooth, but it simultaneously strengthens the immune system to build up a stronger body. No sugar or sugar substitute can claim the same. In this sweet treat, we combine honey with fresh fruits and aromatic spices to create a sweet, fragrant fruit salad that you’ll enjoy from first whiff to last bite.

  • 1/4 cup sliced watermelon
  • 1/4 cup sliced pineapple
  • 1/2 cup sliced strawberries
  • 1 kiwi, sliced
  • 1 fig, sliced
  • 1/4 cup dates, sliced
  • 3/4 cup honey
  • 2 sticks cinnamon
  • 2 (whole) star anise
  • 3 cloves
  • 2 cardamom pods
  • 1/2 teaspoon chopped mint leaves (optional)
  • 1 tablespoon grated orange peel (optional)

On a large plate or in a large bowl, layer the sliced fruits. In a pan over low heat, saute the spices in 1-2 tablespoons of water, until water evaporates or spices become fragrant. Add these spices to the honey and set aside for 7-10 minutes. When the honey is infused with the fragrance and taste of the spices, remove the cinnamon sticks, star anise, cloves, and cardamom pods. Pour the spiced honey over the fruits. Garnish with chopped mint leaves and grated orange peel, if desired.

Serves two.
